Yame sencha offers a beautifully balanced expression of freshness and depth. Bright, crisp vegetal notes open the cup, reminiscent of young spring greens and freshly cut grass. These lift into a gentle natural sweetness, carried by a smooth, rounded body.
Subtle umami unfolds at the centre, with hints of steamed spinach and tender herbs, followed by a clean, refreshing finish. The aftertaste is soft and lingering, leaving a sense of clarity and calm rather than intensity. Sencha (Green Tea) - Asagao
How to Prepare Sencha
- Add 3–4g of sencha leaves per cup to a kyusu (Japanese teapot).
- Add 60–70ml of hot water per cup at around 70–75°C. A lower temperature will produce a milder and rounder taste, while higher temperatures will make the tea taste more sharp. If you enjoy a sharper tasting tea, a temperature of 85–90°C is suitable.
- Allow the tea to infuse for around 60 seconds, then pour evenly into cups. Be sure to empty the teapot completely.
- The same leaves can be used for 2–3 infusions. For the second infusion, use slightly hotter water and steep briefly for 10 seconds.
