Collection: Premium Matcha Tea from Japan

In Japan there’s a strict definition of Matcha tea. Proper Matcha tea is grown slowly, under shade, in a way that produces very tender young leaves. Only the youngest leaves are harvested, which are normally very light green in colour and have a sweet taste. As it is grown slowly, the farmers only harvest the tea once a year, usually in May. After harvest, they separate the stems and leaves, steaming the leaves, then drying and grinding them slowly to produce a fine powder. This is what proper Matcha tea is.
