Yame, Fukuoka

90-100°C, 3–4g per cup, 30 seconds. 2–3 infusions.


From the renowned tea-growing region of Yame in Fukuoka Prefecture, this Kamairicha Kuki Hojicha reflects the quiet craft of a small, family-run garden where tradition is preserved through careful, generational knowledge. Hand-roasted in small batches, it brews to a soft, light caramel colour—clear, warm, and inviting.

This tea brings together two distinct styles. Kamairicha, a rare pan-fired green tea, is crafted without steaming, resulting in a smoother, less astringent cup with a gentle, rounded sweetness. It is paired with kuki hojicha, made from the stems and twigs of the tea plant and lightly roasted to enhance natural sweetness while reducing caffeine. The result is a tea that is both delicate and comforting.

The flavour is light, sweet, and mellow, with elegant caramel undertones and a clean, refined finish. Naturally low in caffeine, it is easy on the body, often enjoyed for its calming, soothing qualities.

How to Prepare Hojicha

  1. Add 3–4g of hojicha leaves per cup to a kyusu (Japanese teapot).
  2. Add 80ml of freshly boiled water per cup at around 100°C.
  3. Allow the tea to infuse for around 30 seconds, without stirring or disturbing the tea leaves.
  4. Pour evenly into cups, making sure to empty the teapot completely. The same leaves can be used for 2–3 infusions.
