A recipe for Matcha Cake

Matcha is not only for drinking tea. It’s also a great ingredient for making delicious cake and ice cream. Here I wanted to introduce you to a very easy recipe for making Matcha Cake.

 Ingredients:

 Unsalted butter (room temp)             90g 

Brown Sugar                                       80g

Eggs (room temp)                               2

Organic White Flour                           90g

Matcha powder                                  5g

Baking powder                                    2g

 

1.     Mix the butter and sugar together with a hand mixer in a bowl until they are smooth and creamy.

2.     Add the 2 eggs, one after the other, mixing until they are very smooth.

3.     Add the flour, Matcha powder and baking powder and mix well.

4.     Spread the mixture into a cake baking tin, bake for 35 minutes at 160 degrees, until it has risen.

 

I have recommended 5g of Matcha powder which is quite a lot, as I enjoy the taste of Matcha. If you prefer it milder, then you should adjust the amount to 4 or 3g. 

 I love the idea of having a piece of matcha cake with a cup of Ippodo’s hojicha tea. Hojicha tea has a tender taste with a smoky flavor, something that combines very well with the sharp taste of Matcha.
